Longhorn cattle are very much a case of quality over quantity, which is why they're our favourite (and apparently Heston Blumenthal's) choice of meat; they take longer to mature, meaning their meat has a richness to it which makes a perfect choice for steak. If provenance is your thing their meats originate from the following suppliers: Beef is organic, from Quenby hall in Leicstershire Pork is free range, from Packington near Burton on Trent Chicken is free range, from Banham poultry in Norfolk Lamb is free range, Welsh salt marsh (when in season June-August) Welsh border rest of the year Veal is English, Freedom Foods from Somerset All their sausage, bacon and burgers are made on the premises, just down the road from us.
